Founder Paul "Pablo" Schwaesdall and his family started this restaurant in September 1986, after moving to Minnesota from Southern California. It's still a family business today, led by Pablo and his wife, Ann, preparing and serving a full menu of Mexican and American favorites.

Located adjacent to the restaurant is Señor Mosquito's, a cantina serving margaritas and other bar drinks, beer, wine, soft drinks and appetizers. With a south of the border decor that's rich in bright, primary colors, Pablo's has the festive feel of a genuine Mexican cantina, with the informal friendliness of a small-town cafe.
